Lobster Academy teaches lobster basics

ORONO, Maine -- Maine lobster will play a prominent role at a four-day school that draws lobster buyers from around the world.

The Lobster Academy runs from Monday through Thursday in St. Andrews, New Brunswick. The dean of the school is Bob Bayer, the head of the University of Maine's Lobster Institute.

Participants come from around the world, representing supermarket chains, restaurants, cruise ship lines and other companies that buy lobster. At the academy, they'll attend lectures and tour a processing plant, learning about pricing, processing, regulatory needs, marketing opportunities and sustainability certification.

The academy evolved from the Lobster Institute's Lobster College, which was held in Boothbay Harbor and Winter Harbor for several years.
