My Colorado Travels: Changes In Fine Dining Ahead

DURANGO, Colo. -
We've just crossed the 'top of the world', at least in this part of it, the 'Mike On America' crew and I. We're in Durango Colorado, having driven down from Aspen, and Paonia. There is no prettier drive, anywhere, period.

But here's an Aspen flash--the era of the 'iconic chef', the 'chef rock star'---IS OVER!

That's the word from Dana Corwin , the Editor in Chief of Food and Wine magazine. They played host to their 25th Food and Wine Festival in Aspen over the weekend. All the culinary 'super stars', and the 'up and comers' were there. Name it, think it, eat it---there.

The industry buzz was two fold--the times they are a changin' , and it's time to drill down in price point. 'Fine dining' as a business is suffering a bit from price point-itis--too high and not enough willing to pay, or capable of paying. So how to spread the gospel of 'excellent cuisine'? Go vertical! Smaller restaurants, more reasonable prices, and a touch of humility in the kitchen spread out over various products. See 'Craft' restaurants. Eat well, without breaking the bank.

Paonia, Colorado is something to see. Small, rural Rocky Mountain town--with a 50 million dollar business in it--Chaco's--sandals and a lifestyle and philosophy. Started as a company to make a 'working' sandal for river boat guides--it has blossomed into a multiple sku footwear company that walks the talk of environmentalism and compassion. AND, it makes money. They are expanding their offerings--new shoe hitting market soon--but they are as impressed by the 185 people that showed up at the company picnic (125 on the payroll)--that feeling of family. There are 1400 people in Paonia--an eclectic mix of artists, hippies, cowboys and farmers. And sandal makers. Remarkable.

Which brings us to Durango--understand I first came to live in Colorado in 1971. No reason to go to Durango. Western slope--little, dusty, cowboy town. No reason.

Fast forward. Sleeping tonight in a four million dollar house! Four million. And no, it's not the most expensive place in town. Durango is becoming the new 'value' investment on the high end real estate circuit. Vero Beach in the mountains--only, frankly, better. Clean,crisp air--stunning--stunning--drive over from Paonia. Switzerland in America. You will find no better. And I've been there, too.

Food for thought, the 'soul' of the sandals business, and the top of the world.
